Pauline travels throughout the Languedoc region to hunt out plots that will yield the finest grapes.
She knows every detail about each of these plots: exposure, soil profile, the age of the vines, their yield, and the amount of sunshine received.
She discusses and follows up on vineyard management techniques with our long-term partner growers in order to obtain the high quality of grapes we are looking for.
